Natural Grape Flavor an Alternative to Buffered Vinegar

There is now an alternative to using buffered vinegar in meat applications—Prosur Inc. now offers Natural Grape Flavor, derived from spray-dried grape juice of mature grapes.

Natural Grape Flavor is made up of multiple naturally-occurring phenolic compounds and organic acids such as malic acid, acetic acid, and tartaric acid. These are all naturally present in grapes.

Natural Grape Flavor allows for the removal of “vinegar” on the label. Additionally, the natural flavor allows for no more vinegar taste or aroma, and it’s naturally low in sodium compared to buffered vinegar. Other benefits include protection against microbial deterioration, water soluble, GMO and allergen free, and avoids syneresis and browning in packaging.
